Cuvée “Calicem” comes from grapes harvested from old vines plots, selected for their maturity and low return in order to let the whole seed mature.
– Grape variety: 100% Sauvignon
– Soil: Kimmeridgian marls (clay-limestone soil on small oysters)
– Tasting notes: A more complex and rounder wine, with subtle flavours and a very long finish.
– Wine-making process: Whole seed skin maceration for 36 to 40 hours. This ancient process allows for tannin concentration and aroma expansion simultaneously. “Cuvée Calicem” is matured on fine lees for 12 months. More tannic, it will improve with age. Can be stored for 4 to 5 years.
The organic culture increases the soil value and wine concentration, thanks to a deep rooting, while enhancing soil biodiversity.
